Hubbard Squash Salad
Ingredients
4 cups raw shredded hubbard squash
1/2 cup dried cranberries
2/3 cup orange juice
1 TB orange zest
1 TB honey
Directions:
Combine cranberries, orange juice, orange zest and honey in a small saucepan and cook for 5 minutes. Pour it warm over the squash and mix well.
Makes 6-8 servings
